Chocolate Coconut Cookies

 This week I had fun changing up one of our favorite cookie recipes. I liked the result a lot so I thought I would share the recipe.  Here is a post that has the original recipe in it.

 The prompting of my experimenting this time came from Tropical Traditions products. I had received Coconut oil to review (and you can try and win some in my current giveaway!) and before that I had won a bucket of finely shredded coconut from another blog. I decided to use both in these cookies and they did turn out yummy!

Chocolate Coconut Cookies
1/2 cup coconut oil
1/3 cup butter
3/4 cup sugar
2 eggs
2 t. vanilla
1/2 t. salt
1 t. soda
1/2 cup cocoa powder
2 cups flour (I used whole wheat flour)
3/4 cup finely shredded unsweetened coconut



In bowl mix together coconut oil, butter and sugar. Once they are creamed then add in the eggs, vanilla, salt, soda and cocoa powder. Then stir in flour and coconut. Drop by spoonfuls on a cookie sheet (I use silicone sheets but I don't think you need to grease a pan). Bake in a 360 degree over for 8-9 minutes.
