For the first day of Spring Aaron made us a Happy Spring sign, and I after some laying in bed and thinking (I have a bad habit of doing that in the mornings when I don't feel like getting out from under the warm covers) came up with the idea of these nests for a fun springtime dessert.
Boiled Cookies (That is what my Mom always called them but most people call them no bake cookies)
Combine in saucepan and cooke over med. high heat:
Remove from heat and add:
Makes about 4 dozen.

- 1 cup sugar (I often use a bit less)
- 3 T. Cocoa powder
- 1/2 cup butter
- 1/2 cup milk
Remove from heat and add:
- 1 teaspoon vanilla
- 3/4 cup peanut butter
- 3 cups oatmeal
- 1/ cup coconut
Makes about 4 dozen.
The kids loved the cookies!

ReplyDeleteAngie, With the ones pictures I used quick oats and that is what I prefer but I have used regular oatmeal many times too. I would think you could make cute nests with rice crispy treats too. I actually first thought about making something like that with bran flakes to use for the nests but then thought of the Oats cookies.
