Some recipes
I made Chocolate Chewy Cookies the other day. This has been one of my favorite cookies since I was a kid. This was the first batch of cookies that I have made using butter that I made myself. It was kind of fun as I had homemade butter, eggs from my parents' chickens and flour that I ground myself. Now if I could just figure out how to make my own sweetener! I have thought about growing stevia and trying to use that but haven't done it yet, have any of you grown and processed stevia?
Anyway I thought I would share the cookie recipe:
~ 1/2 teaspoon salt
~ 3/4 cup butter
~1 1/2 cups sugar
~2 eggs
~ 2 teaspoons vanilla
~ 2 1/2 cups flour(I often put some oatmeal in),
~1/2 cups cocoa powder
~ 1 teaspoon soda
Mix this all up and drop spoonfuls on a ungreased pan. Bake at 350 degrees for 8-9 minutes.
I had also said I would post recipes for Hash browns and Enchiladas.
Hash browns: I peel my potatoes and then chop them up with my Pampered Chef food chopper quite small. In a cast iron pan I heat some oil up and I will put a layer of chopped potatoes in and sprinkle it with Spike (a seasoning salt) and then continue to add more potatoes and season and flipping them around to make sure that everything gets a little crispy. You may have to add more oil. After all the potatoes are in, lower the heat and cover with a lid until everything is cooked through.
We like to eat these with Ketchup. This is one of Ken's favorite breakfast items and it is very easy to make. And for us very cheap as we get all our potatoes free.
Enchiladas: Brown in Skillet: 3/4 lb. Hamburger and 1 medium onion (chopped). Then stir in: 2 cups refried beans, 1 teaspoon salt and 1 clove garlic (mashed). Heat until bubbly. Pour 1/2 can of spicy tomato sauce in bottom of 9 x 13 pan. Roll hamburger mixture up in tortillas (12) and place in pan. Cover tortillas with the rest of tomato sauce and then cover with 2 cups of shredded cheddar cheese. Bake uncovered at 350 degrees for 15- 20 minutes.
