Today is a themed day for Works-for-me-Wednesday over at Rocks in my dryer. She asked us to post about what we would make for supper if it is late, everybody is hungry and there is not much in the cupboards. So here is our family's quick and easy supper:
Tuna Melts
To make them you need Bread (I like to use our homemade whole wheat bread that I try to always have on hand but regular store bought bread is fine as well), Tuna Salad (made from a drained, canned tuna, mayonnaise to moisten and Chopped up dill pickle or onion or both), and Cheese (either sliced or shredded is fine).
Take a cookie sheet and lay as many pieces of bread on as desired, spread tuna salad on top, then put cheese on top of that. Place in oven that is turned on to broil. Leave in until the cheese is melted as much as you desire (you might want it just melted or you might like it a tiny bit brown on the top). It only takes a few minutes so watch them carefully. Pull them out when done and you are ready to eat! Our whole family likes this a bunch and it is super easy and quick!
We like to eat this with popcorn and sliced apples.

We love tuna melts in our house! I grew up eating them on English muffins. I also like to add a slice of tomato under the cheese.
Sounds yum! An easy last-minute one that I love is grilled mozzarella and tomato sandwiches, made the same way as grilled cheese, except using mozzarella and Roma tomatoes (because they're dryer) with a sprinkle of salt.
And for a side, since we usually have apples on-hand, a quick apple/coolwhip salad!
Our family isn't crazy about tuna, but I'm going to try it your way and see if it's better! I think the hot/toasty variety might go over better.
Our quick meals:
Fried rice: use leftover white/brown rice from the night before. I saute onions, choppped carrots, celery, and garlic. Add beaten eggs. Cook the eggs with veges, then add rice, soy sauce, and a touch of hot sauce. Add frozen peas a couple minutes before serving. After making it a few times, it's amazing how quickly this meal is ready.
Spicy Beans and Rice: I use brown rice and open a can of chili beans (unless I have some precooked). We like to sprinkle cheese and salsa on the top. For a side we'll eat tortilla chips and sliced green peppers and apples.
